Richard Hamming's "The Art of Doing Science and Engineering: Learning to Learn" is an insider's (Manhattan Project, Bell Labs) view of how computer science as we know it developed.
I read this and I was really surprised by how dismissive he was of his peers! Like it was almost catty. Great book tho.

For software engineering, I recommend A Philosophy of Software Design. It has principles that I think translate well to other engineering fields.
