I always really enjoyed Travels by Michael Crichton. Considering how popular he is I've never spoken to anyone else who's read it. It gave me a lot to think about in my early 20s. I also enjoyed Jonathon Livingston Seagull, which seems to have fallen out of favour recently.

I would also add "Jonathan Livingston Seagull" by Richard Bach. Its a simple and inspiring story about a bird who tries to question the very simple facts and norms of life established by generations before.
